Cajun Shrimp and Mushrooms

This easy Cajun Shrimp and Mushrooms recipe brings tender shrimp, savory mushrooms, and a flavorful sauce together in one pot. Served over warm rice, it’s a comforting, family-style meal that’s simple enough for a weeknight dinner.

Not everyone from Louisiana is Cajun, and my family’s Cajun heritage is something I hold close to my heart. Cajuns are descendants of French-speaking Acadians, many of whom settled in southern Louisiana after being displaced from their homes in what is now eastern Canada during the 1700s. Over generations, they developed a distinctive culture filled with wonderful traditions, music, and, of course, incredible food.

My grandmother was a genuine Cajun, and some of my fondest memories are of visiting family along the bayous of Grand Isle and Dulac and living with her in a stilted house in Terrebonne Parish. What I remember most is how she seemed to cook from morning until night. Homemade bread, gumbo, crab boils, and so many other delicious dishes were always coming out of her kitchen.

This Cajun Shrimp and Mushrooms recipe is one of her creations, passed down to my mother and eventually to me. It’s a simple one-pot dish with tender shrimp, plenty of mushrooms, and a savory sauce that’s perfect for spooning over rice.

It’s also one of those meals where there is rarely a grain of rice or drop of sauce left on anyone’s plate.

As my maw maw would say, “Come see, sha, and eat dis up!”

Why You’ll LOVE Cajun Shrimp and Mushrooms

  • A treasured family recipe. Passed down through three generations, this dish brings a little Cajun tradition to the dinner table.
  • Easy one-pot cooking. Everything except the rice comes together in one pan for an easy meal and cleanup.
  • Rich, savory flavor. Shrimp, mushrooms, ginger, and soy sauce create a delicious sauce that complements the rice.
  • Perfect for weeknights. Simple ingredients and minimal prepaation make this an easy dinner when time is short.
  • Great for leftover rice. Turn rice from another meal into something completely new with a flavorful shrimp and mushroom sauce.

What You’ll Need

  • Shrimp – Fresh or frozen shrimp work beautifully. Clean and devein before cooking.
  • Mushrooms – While canned mushrooms make preparation easy, fresh sliced mushrooms work just as well.
  • Celery and butter – Create an aromatic, savory foundation for the sauce.
  • Soy sauce and ginger – Add depth, warmth, and a delicious umami flavor.
  • Beef broth – Gives the sauce richness and a savory base.
  • Cornstarch and water – Thicken the sauce to a gravy-like consistency that clings to the rice.
  • Black pepper – Adds a little warmth without overpowering the other flavors.
  • Cooked rice – Medium-grain white rice is my preference because its tender texture pairs beautifully with the sauce.

Recipe Tips

Use a heavy-bottomed pot. A Dutch oven or my all-time favorite Cajun Classic Cookware distributes heat evenly and gives you plenty of room to cook the shrimp and mushrooms without overcrowding.

Don’t overcook the shrimp. Shrimp cooks quickly and can become rubbery if left on the heat too long. Cook just until the shrimp are opaque and reach 145°F.

Fresh or canned mushrooms work. I usually reach for canned mushrooms because they’re convenient for a quick weeknight meal. If you prefer fresh, substitute about one cup of sliced mushrooms and sauté until tender.

Prepare the rice ahead. A rice cooker makes preparing rice practically effortless. If cooking ahead, refrigerate the rice promptly and reheat thoroughly before serving, rather than leaving it on the counter.

Thicken the sauce gradually. Cornstarch gives the sauce a smooth, gravy-like consistency. Mix it with cold water before adding it to the hot pan, then allow the sauce to simmer and thicken. Add a little more slurry if necessary.

Try a different thickener. Arrowroot, tapioca starch, or potato starch can substitute for cornstarch, although the amount and thickening results may vary.

Adjust the seasoning. Soy sauce and beef broth provide plenty of savory flavor, so taste before adding additional salt. For a little Cajun heat, add a few dashes of your favorite Louisiana hot sauce.

Make the most of leftover rice. If you have rice in the refrigerator, this is an easy way to turn it into another satisfying meal without much additional preparation.

How to Serve Cajun Shrimp and Mushrooms

  • Spoon the shrimp, mushrooms, and savory sauce generously over warm medium-grain white rice.
  • Serve with crusty French bread for soaking up every last drop of sauce.
  • Add a simple green salad with a light vinaigrette to balance the richness of the dish.
  • Pair with steamed green beans, broccoli, or another vegetable for a little extra color.
  • Finish with a few dashes of Louisiana hot sauce if you enjoy a little extra heat.

FAQs

Absolutely! Frozen shrimp works just as well as fresh. Thaw completely in the refrigerator or under cold running water, then drain and pat dry before cooking.

Yes! Substitute about one cup of fresh sliced mushrooms for the canned mushrooms. Sauté them until tender and their excess moisture has evaporated.

I prefer medium-grain white rice because it’s moist, tender, and holds the sauce beautifully. Long-grain white rice, jasmine rice, or brown rice are also good choices.

You can chop the celery, prepare the mushrooms, and cook the rice ahead of time. For the best texture, I recommend cooking the shrimp shortly before serving.

Not particularly. The original family recipe relies on savory ingredients rather than hot peppers for its flavor. If you prefer a spicier dish, add a few dashes of Louisiana hot sauce or a pinch of cayenne pepper.

Certainly! Bite-sized pieces of boneless chicken would work well with the mushrooms and savory sauce. Just make sure the chicken is fully cooked to 165°F before serving.

Store the shrimp and mushroom sauce in an airtight container in the refrigerator for up to three days. Keep leftover rice refrigerated separately. Reheat both thoroughly to 165°F, adding a splash of broth or water to the sauce if needed.
