There’s something irresistible about a big bowl of rich, creamy mashed potatoes. They’re the ultimate comfort food, a must-have at Thanksgiving and Christmas, and the perfect side dish for just about any meal. I’ve even been known to enjoy a heaping bowl all by itself. When you can have creamy mashed potatoes that are this good, who needs anything else?
I’m all about making delicious food without making things complicated, and these amazingly creamy mashed potatoes are a perfect example.
My secret to keeping things simple? A trusty stock pot with a strainer insert and my KitchenAid mixer. Once the potatoes are tender, I simply lift the strainer to drain the water, transfer the potatoes to the mixer, and mix everything together until smooth and creamy. No juggling a heavy pot of boiling water or washing extra dishes.
The results are rich, fluffy, and wonderfully creamy mashed potatoes that taste like you spent far more time making them than you actually did.
Whether you’re planning a holiday feast, serving a comforting family dinner, or making extra for leftovers, these mashed potatoes are sure to become a favorite.

What You’ll Need
Recipe Tips
Salt the cooking water. Adding salt to the water while boiling helps season the potatoes from the inside out. I prefer coarse kosher salt, but regular table salt works just fine.
Make draining easier. A stock pot with a strainer insert is one of my favorite kitchen shortcuts. When the potatoes are tender, simply lift out the strainer and let the water drain back into the pot. No need for a separate colander or carefully pouring off a heavy pot of boiling water.
Put your stand mixer to work. I use my KitchenAid stand mixer with the flat beater attachment to make these potatoes. Add the cooked potatoes and remaining ingredients, then mix on low speed just until smooth and creamy. A pouring shield helps keep everything in the bowl. Avoid overmixing, which can make mashed potatoes gummy.
Soften the cream cheese. Let the cream cheese soften before adding it to the warm potatoes. This helps it blend more easily and creates a smoother consistency.
Make them extra creamy. Cream cheese and sour cream give these potatoes their wonderfully rich texture. If you prefer a thinner consistency, add a splash of warm milk or heavy cream while mixing.
Try red potatoes. For a delicious twist, use red potatoes and leave the skins on. Just scrub them well and remove any blemishes before cooking. The skins add a little texture and rustic charm.
Make plenty for leftovers. I often prepare 10 pounds of potatoes at a time because leftover mashed potatoes are so versatile. They’re perfect for quick meals later in the week.
