Authentic Tableside Guacamole

I have so many fond memories of growing up in El Paso, Texas, especially the days when we’d head across the border into Mexico for a little shopping and, of course, some delicious food like this tableside guacamole. I’m pretty sure that’s where my love affair with Mexican cuisine began!

To this day, a good Mexican restaurant is one of my favorite places to dine out. And whenever I see tableside guacamole on the menu, you can be sure it’s going on my table and in my belly.

There’s something about watching fresh avocados, tomatoes, cilantro, and seasonings come together right before your eyes. So fresh, so good!

Naturally, I had to create my own version of tableside Guacamole at home.

I keep things pretty simple, starting with ripe avocados, fresh tomatoes, and cilantro. A little white onion adds a pleasant bite, while fresh lime juice, kosher salt, and black pepper bring everything together. And then there’s my own little twist: cumin. Lots of it!

I love the warm, earthy flavor cumin brings to this guacamole. It gives the fresh ingredients a little extra depth without overpowering them. The result is a deliciously chunky guacamole that’s bursting with flavor and takes just minutes to prepare. No cooking, no complicated ingredients, and very little cleanup.

It’s perfect for family gatherings, parties, taco nights, or those times when you’re craving a little something fresh and flavorful.

Muy bueno!

  • Fresh, vibrant flavors. Ripe avocados, tomatoes, cilantro, and lime juice create a delicious combination of bright, fresh ingredients.
  • Quick and easy. Just chop, mash, season, and serve. No cooking required.
  • Simple ingredients. Everything you need is readily available at most grocery stores.

What You’ll Need

  • Avocados – The heart of the recipe. Choose ripe avocados that yield slightly to gentle pressure without feeling mushy.
  • White onion – Adds a fresh, slightly pungent bite. I prefer white onion for its bold flavor, but red or yellow onion works, too.
  • Tomato – Adds freshness, color, and a little juiciness. Roma tomatoes are a good choice because they contain less moisture. Vine-ripened tomatoes are also delicious.
  • Fresh cilantro – Brings a bright, herbal flavor that complements the avocados and lime.
  • Lime juice – Adds acidity, brightens the flavors, and helps slow browning. Freshly squeezed is my first choice, but bottled lime juice works in a pinch.
  • Ground cumin – My favorite addition! Its warm, earthy flavor gives this guacamole a distinctive taste.
  • Jalapeño (optional) – Adds a little heat. Use fresh, jarred, or canned jalapeños, depending on what you have available.
  • Kosher salt and black pepper – Enhance the natural flavors of the ingredients. I prefer coarse kosher salt, but regular table salt works just as well.

Recipe Tips

Choose ripe avocados. Look for avocados that yield slightly when gently pressed. If they’re too firm, they’ll be difficult to mash. If they’re overly soft, they may be past their prime.

Make avocado preparation easy. Cut each avocado in half lengthwise and remove the pit. For softer avocados, score the flesh into cubes while it’s still inside the skin, being careful not to cut through the peel. Then scoop the pieces into your mixing bowl with a spoon. No peeling necessary.

Keep it chunky or make it smooth. I prefer my guacamole with plenty of texture, so I use a fork to gently mash the avocados. For a smoother consistency, mash them more thoroughly or use a traditional molcajete.

Use fresh lime juice. Freshly squeezed lime adds a wonderfully bright flavor. If you’re short on time, bottled lime juice works, too.

Adjust the onion flavor. White onion has a nice, assertive bite, which I enjoy in this recipe. For a milder flavor, use red onion or reduce the amount slightly.

Add a little heat. If you like spicy guacamole, stir in some finely chopped jalapeño. Start with a small amount and add more until you reach your preferred heat level.

Season to taste. I love cumin and use a generous amount. You can easily adjust it to suit your preferences. Start with less if you’re unsure, then add more as needed.

Serve it fresh. Guacamole tastes especially good just after it’s made. If you need to prepare it ahead, cover the surface tightly with plastic wrap and refrigerate until ready to serve.

How to Serve Tableside Guacamole

  • There’s certainly nothing wrong with grabbing a big bag of tortilla chips and digging into a bowl of freshly made guacamole. In fact, that’s usually my first choice!
  • Serve guacamole as an appetizer with a generous bowl of crispy tortilla chips. It’s an easy crowd-pleaser for parties and family gatherings. It’s the perfect companion to serve alongside a bowl Corn and Black Bean Salsa.
  • For a deliciously crunchy alternative, serve with fresh chicharrones or fried pork rinds.
  • Add a spoonful of guacamole to tacos, fajitas, burritos, or quesadillas for extra flavor and freshness.
  • Dollop guacamole over a plate of loaded nachos along with salsa, cheese, and sour cream.
  • Spread guacamole onto burgers, wraps, or sandwiches for a flavorful alternative to mayonnaise.
  • Add guacamole to roasted vegetables, rice bowls, or salads for a fresh finishing touch.
  • Don’t limit yourself to Mexican food. Like hot sauce, you can put this stuff on just about anything, from arepas to zucchini. Get creative and let me know your favorite way to serve it.

FAQs

Tableside guacamole is prepared fresh at the table, often in a traditional molcajete, so guests can watch the ingredients come together and adjust the flavors to their liking. This homemade version captures that same fresh preparation and simple combination of ingredients.

Absolutely! If you’re not a fan of cilantro, simply leave it out. The avocado, lime, onion, tomato, and cumin will still provide plenty of delicious flavor.

Add finely chopped jalapeño or serrano pepper. Start with a small amount, then taste and adjust. For extra heat, include some of the pepper’s white inner ribs and seeds.

Exposure to air causes avocado to oxidize and turn brown. To slow browning, transfer the guacamole to an airtight container, smooth the surface, and press plastic wrap directly against the guacamole before sealing and refrigerating. Lime juice also helps slow oxidation, although it won’t prevent browning entirely.

Guacamole is best served fresh. Leftovers can be refrigerated in an airtight container for 1 to 2 days for the best flavor and appearance. If the surface turns slightly brown, you can remove the discolored layer and check the remaining guacamole before serving. Discard it if it develops an off smell, mold, or other signs of spoilage.

While you can freeze guacamole, I generally don’t recommend freezing this particular recipe because the fresh tomatoes and onions can become watery after thawing. For the best texture and flavor, prepare it fresh whenever possible.
