Loaded Baked Potato Salad

With spring just around the corner and warmer weather on the way, I can’t think of a better reason to bring family and friends together for a little food, fun, and laughter. That’s exactly what we have planned for this weekend, and I’m pretty sure there won’t be a shortage of any of those things!

One of the dishes I’m making is this Loaded Baked Potato Salad, a creamy, flavorful twist on traditional potato salad with all the delicious toppings you’d expect on a loaded baked potato. We’re talking tender potatoes, smoky bacon, cheddar cheese, sour cream, green onions, and my own little addition of ranch seasoning. Everything comes together in a creamy dressing that’s packed with flavor.

And the best part is that it’s so incredibly easy to make.

I like to boil the potatoes the night before and refrigerate them until they’re nice and cold. The next day, peeling and cutting them is much easier, and putting the salad together takes very little time. I generally prefer red potatoes because they hold their shape so well, but I’ve made this recipe with other varieties, too. Each gives the salad a slightly different texture, and they’re all delicious in their own way.

This is one of those tried-and-true family favorites that’s equally at home at a backyard barbecue, holiday gathering, or casual weeknight dinner.

And if you’re lucky enough to have leftovers, there’s another delicious way to enjoy them. More on that below!

Enjoy!

Why You’ll LOVE Loaded Baked Potato Salad

  • Loaded baked potato flavor. Bacon, cheddar cheese, sour cream, and green onions bring all the familiar flavors of a loaded baked potato into one creamy salad.
  • Easy to prepare. Simple ingredients and straightforward preparation make this a convenient side dish.
  • Perfect for making ahead. Prepare the potatoes the night before and assemble the salad when you’re ready.
  • Deliciously creamy. Mayonnaise, sour cream, and ranch seasoning create a rich, flavorful dressing.
  • Great for entertaining. A hearty, crowd-pleasing addition to potlucks, backyard barbecues, family dinners, and holiday gatherings.

What You’ll Need

  • Red potatoes – The hearty foundation of the salad. I prefer red potatoes because they hold their shape after boiling. Yukon Gold or Russet potatoes will also work.
  • Bacon and cheddar cheese – Add smoky, savory flavor and the familiar richness of a loaded baked potato.
  • Sour cream and mayonnaise – Create the creamy dressing that coats the potatoes. I prefer Hellmann’s Real Mayonnaise or Duke’s Real Mayonnaise.
  • White and green onions – Add fresh flavor and a little crunch. Use both the white and green portions of the green onions.
  • Ranch seasoning mix – My favorite addition for a little extra flavor. I like Hidden Valley Ranch Seasoning Mix.
  • Parsley, salt, and black pepper – Round out the flavors and add the finishing touches.

Recipe Tips

Choose potatoes that hold their shape. Red potatoes are my first choice because their waxy texture keeps them from falling apart when mixed with the dressing. Yukon Gold potatoes are another good option. Russets will work, though they’ll give the salad a softer consistency.

Cook the potatoes ahead of time. I like to boil my potatoes with their skins on, then refrigerate them overnight. Once chilled, they’re easier to handle, peel, and cut into evenly sized pieces.

Peel them or leave the skins on. It’s entirely a matter of preference. I sometimes leave the skins on smaller red potatoes because they’re thin and tender. For Russets, I generally prefer peeling them. If you can’t decide, remove half the skin and leave the rest!

Try baking the potatoes. For a slightly different flavor, substitute baked potatoes for boiled. Pierce the cleaned potatoes several times with a fork, lightly coat with oil and kosher salt, and bake at 400°F until fork-tender, approximately one hour for medium-sized potatoes. Allow them to cool before preparing the salad.

Use freshly cooked bacon. While real bacon bits are convenient, freshly cooked and crumbled bacon adds wonderful smoky flavor. Leftover bacon from breakfast works beautifully, too.

Use the entire green onion. Both the white bottoms and green tops add flavor. Just remove the roots and any wilted portions. For a milder onion flavor, substitute fresh chives.

Mix in stages. To distribute the dressing and seasonings evenly without breaking up the potatoes, add half the mixture to the potatoes and gently fold. Add the remaining half and toss again until evenly coated.

Give it time to chill. I recommend refrigerating the salad for a couple of hours before serving. The flavors have time to blend, making an already delicious salad even better. However, if everyone’s pounding their knives and forks on the table waiting for dinner, go ahead and serve it right away.

How to Serve Loaded Baked Potato Salad

  • This hearty potato salad is an excellent side dish for almost any family meal. It’s especially good with foods coming off the grill.
  • I love serving it alongside Dry Rubbed Barbecue Country Style Pork Ribs, grilled chicken, hamburgers, or a juicy steak. The creamy potatoes provide a wonderful contrast to smoky, savory barbecue flavors.
  • Loaded Baked Potato Salad is also ideal for potlucks, backyard barbecues, pool parties, holiday gatherings, and casual family dinners. Since you can make it ahead, there’s one less thing to worry about when guests arrive.
  • This salad is hearty enough for lunch or a light dinner, especially when paired with a cup of soup or fresh vegetables.
  • Warm the leftovers in a casserole dish with a little extra cheese on top. When I first tried this, the result was so delicious that it eventually became its own recipe. Loaded Baked Potato Casserole is a warm, cheesy variation that’s every bit as good as this original salad.

FAQs

Absolutely! In fact, I recommend it. You can boil the potatoes the night before and refrigerate them until you’re ready to prepare the salad. You can also assemble the entire salad a day ahead. Keep it covered in the refrigerator and gently toss before serving.

Yes! The skins on red potatoes are thin and tender, making them an excellent choice for leaving unpeeled. You can remove all the skins, leave them on, or peel only some of the potatoes. It’s entirely up to you.

Definitely! Baking the potatoes adds a slightly different flavor and texture to the salad. Pierce the potatoes with a fork, lightly oil and season them, and bake at 400°F until tender. Allow them to cool completely before cutting and combining with the dressing.

Yes. Simply omit the bacon for a meatless variation. The cheddar cheese, sour cream, green onions, and ranch seasoning still provide plenty of flavor. For a strictly vegetarian version, verify that the cheese and ranch seasoning are suitable for vegetarians.

Store the salad in an airtight container in the refrigerator for 3 to 4 days. Keep the salad refrigerated until serving and return leftovers to the refrigerator promptly. Discard any salad left at room temperature for more than two hours, or one hour when the temperature is above 90°F.

I don’t recommend freezing this salad. Potatoes can become grainy after thawing, and the sour cream and mayonnaise dressing may separate. For the best flavor and texture, enjoy it freshly prepared or refrigerated for a few days.
