This Loaded Baked Potato Casserole started out as one of my favorite Must-Goes creations. After making a ridiculous amount of Loaded Baked Potato Salad for a dinner party, I found myself with far more leftovers than anyone could reasonably eat.
By the second day, the thought of eating another plateful of cold potato salad was making my eye twitch. Since I absolutely hate wasting food, I decided to try something different. I transferred the leftover salad to a casserole dish, sprinkled a little extra cheese on top, and warmed it in the oven.
As it turned out, that little experiment was a delicious success!
My family loved the warm, creamy potatoes so much that it wasn’t long before I started making the casserole from scratch. I made a few adjustments, cooking the onions and bacon together before combining them with tender potatoes, cheddar cheese, sour cream, mayonnaise, and ranch seasoning.
After topping everything with extra cheese, bacon, and green onions, into the oven it goes until it’s hot, bubbly, and lightly golden. What comes out of the oven is all the goodness of a loaded baked potato packed into one creamy, cheesy casserole.
It’s an easy, satisfying side dish for family dinners, backyard barbecues, holiday gatherings, or any occasion that calls for a little comfort food. And with plenty of bacon and cheese, it’s hearty enough to enjoy as a meal all by itself.
I hope your family enjoys it as much as mine does.

Recipe Tips
Choose the right potatoes. Red potatoes hold their shape especially well in this casserole, making them my first choice. Russet or Idaho potatoes work, too, but their softer texture can make the finished casserole creamier.
Cook the potatoes until just tender. You want them soft enough to pierce easily with a fork but not falling apart. Overcooked potatoes can become mushy when mixed with the other ingredients.
Make peeling easier. I often boil potatoes ahead of time and refrigerate them overnight. Once cooled, they’re easier to handle and peel. A serrated vegetable peeler is especially handy.
Leave the skins on if you like. Whether to peel potatoes is entirely up to you. I sometimes leave the skins on smaller red potatoes because they’re thin and tender. For Russets, I generally prefer peeling them.
Reserve the toppings. Save a little bacon, cheddar cheese, and green onion to sprinkle over the casserole before baking. It gives the finished dish a delicious, colorful topping.
Make it vegetarian. Omit the bacon for a meatless version. You may want to add a little extra seasoning to replace some of the smoky, savory flavor. Check the ranch seasoning ingredients if preparing the dish for strict vegetarians.
Don’t overmix. Gently fold the ingredients together so the potatoes maintain some of their shape instead of turning into mashed potatoes.

Drink Pairings
The creamy potatoes, cheddar cheese, smoky bacon, and ranch seasoning pair especially well with drinks that refresh the palate and balance the richness of the casserole. If you’re serving the casserole with barbecue ribs, pulled pork, or steak, consider choosing a drink that complements the main course as well.

Ingredients
- 1 tablespoon vegetable oil
- 1 large onion diced
- 1 pound bacon cut into ½-inch pieces, divided
- 5 pounds potatoes washed
- 2 cups cheddar cheese shredded, divided
- 1 cup sour cream
- 1 cup mayonnaise
- 2 bunches green onions chopped, divided
- 3 tablespoons ranch seasoning mix
- 1½ teaspoons garlic powder
- Salt and pepper to taste
- Nonstick cooking spray
Instructions
- Place the potatoes in a large stock pot and cover with water. Bring to a boil over high heat, then reduce to medium and cook for approximately 10–15 minutes, or until fork-tender. Drain thoroughly, rinse briefly with cool water, and allow to cool. Peel the potatoes if desired and cut into 1-inch chunks. Set aside.
- Preheat oven to 350°F.
- In a medium nonstick skillet, heat the vegetable oil over medium heat. Add the diced onion and cook until tender and translucent. Reserve ¼ cup of the uncooked bacon pieces for the topping, then add the remaining bacon to the skillet. Continue cooking until the bacon is browned and crisp. Drain excess grease.
- Transfer the onion and bacon mixture to a large mixing bowl. Add the cooked potatoes. Reserve ¼ cup of chopped green onions and ¼ cup of shredded cheddar cheese for the topping. Add the remaining cheese and green onions, sour cream, mayonnaise, ranch seasoning, garlic powder, salt, and pepper. Gently fold together until evenly combined.
- Lightly coat a 9 x 13-inch baking dish with nonstick cooking spray. Transfer the potato mixture to the dish, spreading evenly. Sprinkle the reserved cheese, green onions, and bacon over the top.
- Bake uncovered for approximately 45 minutes, or until the casserole is hot, bubbly, and lightly golden. Make sure the bacon topping is fully cooked.
- Remove from the oven and garnish with additional green onions or a drizzle of sour cream, if desired.
- Serve and enjoy!
