A great barbecue starts with great seasoning, and this homemade BBQ Dry Rub is one of my favorite ways to bring big, bold flavor to just about any cut of meat. It’s a simple blend of pantry spices that transforms everything from pork ribs and brisket to chicken and steaks into something seriously delicious.
Unlike liquid marinades, a BBQ Dry Rub is a combination of seasonings rubbed directly onto the meat before cooking. As the meat cooks, those seasonings develop a flavorful crust that adds color, texture, and that irresistible barbecue flavor we all love.
This is my go-to dry rub for grilling, smoking, and slow-cooking. It’s especially delicious on my Dry Rubbed Country Style Barbecue Ribs, but I use it on all kinds of meats. It even complements barbecue sauce when you want to add another layer of flavor.
And the best part? It’s incredibly easy to make. Just mix a few pantry staples, rub the seasoning onto your favorite cut of meat, and let the flavors work their magic.
This recipe makes about two cups, so there’s plenty to use now and save for your next barbecue.
Fire up the grill and get ready for some seriously good barbecue!

What You’ll Need
Recipe Tips
Start with dry meat. Pat the meat dry with paper towels before applying the rub. This helps the seasoning adhere to the surface and creates a more even coating.
Season generously. Sprinkle the rub over the meat, then use your fingers to gently work it into the surface. Be sure to coat all sides, including the edges. Larger cuts can handle a more generous coating, while thinner cuts may need a lighter touch.
Give the flavors time to develop. I prefer to apply the rub ahead of time, often the night before cooking. Even 30 minutes to an hour in the refrigerator gives the seasoning time to interact with the meat. For larger cuts, an overnight rest works beautifully.
Cover loosely or leave uncovered. Place seasoned meat on a rack inside a roasting pan or baking sheet. Cover loosely with foil or a fitted lid, or leave uncovered in the refrigerator if you prefer. Avoid plastic wrap touching the meat because it can pull off the seasoning. Always keep raw meat contained and separated from other foods.
Watch the heat. If your rub contains sugar, high heat can cause the exterior to darken or burn before the meat finishes cooking. Moderate heat, indirect grilling, or smoking works especially well for larger cuts. Adjust the cooking method for the meat you’re preparing.
Make it your own. Experiment with the seasonings to find your favorite flavor combination. Add more heat for a spicy kick or adjust the balance of sweet and savory to suit your taste.
Store for later. Keep leftover dry rub in an airtight container or resealable bag in a cool, dry pantry away from heat and sunlight. For the best flavor, use within six months.
