Rich and Creamy Spanish Flan

Spanish Flan is a rich, creamy baked custard topped with a silky caramel sauce that’s simply irresistible. It reminds me of crème brûlée, but instead of that crisp, caramelized sugar topping, flan has a luscious golden caramel sauce that flows over the custard and down the sides.

If you’ve ever had flan, you know all about its creamy, rich goodness. And if you haven’t, you’re in for a real treat! It’s one of my all-time favorite desserts, and surprisingly easy to make with just a handful of everyday ingredients, including eggs, milk, and sugar.

The trickiest part is making the caramel, which can go from beautifully golden to burnt in a matter of seconds. You’ll also need a water bath to help the custard bake gently and evenly. Neither is difficult, but both deserve a little extra attention.

And the best part? Turning the finished Spanish Flan out onto a serving plate and watching that gorgeous caramel sauce flow over the top. It’s one of those desserts that looks as impressive as it tastes, making it perfect for holidays, dinner parties, or whenever you’re craving something sweet.

What You’ll Need

  • Eggs – The foundation of the custard, giving flan its wonderfully smooth texture and helping it set as it bakes.
  • Sweetened condensed milk – Adds sweetness and richness for a creamy, decadent custard. Eagle Brand has been a staple in my kitchen for as long as I can remember.
  • Whole milk – Creates a smooth, creamy consistency. I recommend whole milk rather than reduced-fat or skim milk for the best results.
  • Granulated sugar – Caramelized into a beautiful golden sauce that coats the flan when it’s turned out of the pan.
  • Vanilla extract – Adds a lovely flavor that complements the rich custard and caramel. I love using a good-quality pure vanilla extract, like Nielsen-Massey.

Recipe Tips

Watch the caramel closely. Making caramel is probably the trickiest part of this recipe. Once the sugar begins to turn golden, it can burn quickly. Keep a close eye on it and remove it from the heat when it reaches a beautiful amber color. Follow the recipe’s instructions for stirring or swirling.

Use a water bath. A water bath helps regulate the temperature while baking, allowing the custard to cook gently and evenly. Place your flan pan inside a larger, deep-sided baking pan and carefully add hot water as directed in the recipe.

Choose the right pan. Flan can be made in round, square, or Bundt-style pans, or even individual ramekins. I use a 9-inch round cake pan because it bakes evenly and fits nicely inside the larger pan I use for the water bath.

Use whole milk. For a rich, creamy flan, I recommend whole milk rather than low-fat or skim milk. And here’s a little trick: use your empty sweetened condensed milk can to measure the milk if the recipe calls for the same amount. One less measuring cup to wash. Yay!

Experiment with extracts. Replace the vanilla with almond or orange extract for a delicious change of flavor. Start with a small amount, especially with almond extract, since a little goes a long way.

Try a cheesecake-style flan. Add an 8-ounce package of softened cream cheese to the custard mixture for a richer, slightly tangy dessert. Use a mixer or blender to combine everything until smooth.

Give it a coconut twist. For a tropical variation inspired by Puerto Rican flan de coco, try incorporating coconut milk or cream of coconut. You’ll need to adjust the sweetness depending on which you use. Garnish with toasted coconut for an extra-special touch.

Turn it out like a pro. Once the Spanish Flan has chilled thoroughly, let it stand briefly at room temperature. Run a thin knife around the inside edge of the pan to loosen the custard. Place a serving plate upside down over the pan, hold both firmly together, and carefully flip. Gently lift the pan away and let every last drop of that delicious caramel sauce drizzle over the flan.

How to Serve Spanish Flan

  • Serve chilled with plenty of that delicious caramel sauce spooned over the top.
  • Garnish with fresh strawberries, raspberries, or other berries for a beautiful presentation.
  • Add a dollop of freshly whipped cream for an extra-indulgent dessert.
  • Make individual flans in oven-safe ramekins for dinner parties, holidays, or special gatherings.
  • Serve with a cup of freshly brewed coffee or espresso for a delicious after-dinner treat.
  • Sprinkle with toasted coconut for a tropical twist.
  • Enjoy it all by itself. With custard this creamy and caramel this good, you really don’t need anything else!

FAQs

Absolutely! Flan is an ideal make-ahead dessert because it needs time to chill before serving. Prepare it up to two days in advance, cover the pan tightly, and refrigerate. Wait until you’re ready to serve before turning it out onto a plate.

The water bath helps the custard bake gently and evenly by moderating the heat around the pan. This helps prevent overcooking and gives flan its wonderfully smooth, creamy texture.

Yes! Oven-safe ramekins are perfect for individual servings, especially when entertaining. Divide the prepared caramel among the ramekins, add the custard mixture, and bake in a water bath. Smaller portions will generally require less baking time, so check them early.

The edges should be set, while the center should still have a gentle jiggle when you carefully move the pan. The flan will continue to firm up as it cools and chills. Avoid overbaking, which can give the custard a rubbery texture.

Some of the caramel hardens as the flan chills, and the custard may cling to the sides. Run a thin knife around the edges to loosen it before inverting. If necessary, briefly warm the bottom of the pan in warm water to help release the caramel.

Store leftover flan in an airtight container in the refrigerator for up to three days. Keep it tightly covered to prevent the custard from absorbing unwanted odors or flavors from other foods.

I’ve never tried freezing flan, and I don’t recommend it. Egg-based custards can lose their wonderful creamy texture after freezing and thawing. My advice? Enjoy another helping and skip the freezer!

Ingredients

  • 1 cup sugar
  • 1/3 cup water
  • 2 cans sweetened condensed milk
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 28 ounces whole milk
  • 1/8 teaspoon salt

Instructions

  1. Preheat oven to 300° F.
  2. In a large mixing bowl, beat eggs. Add condensed milk, whole milk, and vanilla and continue to beat until smooth. Set aside while you make the caramel sauce.
  3. Add sugar and water to a small saucepan, then mix until well blended. Cook the sugar on medium heat, letting the sugar turn light amber color before stirring. Continue to heat the sugar and stir until the sugar reaches a dark golden color. Remove from heat and immediately pour into the bottom of baking pan, turning the pan as needed to evenly coat the bottom.
  4. Pour egg mixture on top of the caramel sauce in the baking pan.
  5. Place the filled baking pan into the larger pan on the oven rack. Fill the larger pan with boiling hot water to within 1/2-inch of the top of the filled pan.
  6. Bake for 1 to 1-1/2 hours until set and a knife inserted in the center comes out clean.
  7. Carefully remove the flan from the water bath and run a butter knife around the edges to loosen the flan from the pan. Let cool, then refrigerate at least three hours or until ready to serve.
  8. Garnish with whipped cream and berries, as desired.
