Japanese Grilled Chicken Wings

These mind-blowingly delicious Japanese Grilled Chicken Wings are so ridiculously simple to make that I’m almost embarrassed to call this a recipe. All you need are three ingredients: chicken wings, salt, and a family-favorite Japanese seasoning called Ajinomoto.

If you’re not familiar with Ajinomoto, you’re in for a treat! It’s an umami seasoning made from monosodium glutamate (MSG), which enhances the natural savory flavors of food. Umami is the fifth basic taste, alongside sweet, sour, salty, and bitter. Think of it as that wonderfully rich, savory flavor that makes certain foods downright irresistible.

Now, I know what some of you might be thinking. MSG? Isn’t that supposed to be bad for you? Despite its reputation, the FDA considers MSG generally recognized as safe. Of course, like salt, it’s something I use thoughtfully, especially since these wings already pack plenty of salty goodness.

The magic happens on the grill, where the grilled chicken wings develop a beautiful golden exterior while the salt and umami seasoning bring out its delicious, savory flavor. No marinades, complicated preparation, or messy dipping sauces. Just three ingredients and a hot grill.

Trust me on this one. Serve these grilled chicken wings at your next backyard barbecue, and your family and friends will think you’ve been working some serious culinary magic.

Truly mind-blowing!

Why You’ll LOVE These Grilled Chicken Wings

  • Just three ingredients. Chicken wings, salt, and Ajinomoto are all you need for an incredibly flavorful dish.
  • Packed with savory flavor. The combination of salt and umami seasoning brings out the natural richness of grilled chicken.
  • No marinade required. Season the wings directly on the grill without any advance preparation.
  • Perfect for grilling. Golden, flavorful wings with deliciously browned skin and tender, juicy meat.
  • No sauce needed. These wings are so flavorful on their own that you won’t miss the dipping sauces.
  • Great for entertaining. A crowd-pleasing favorite for backyard barbecues, cookouts, and game day gatherings with friends and family.
  • Versatile and satisfying. Serve as an appetizer, a hearty snack, or the main event alongside your favorite side dishes.

What You’ll Need

  • Chicken wings – I prefer whole chicken wings because there’s less preparation involved. You can also use flats and drumettes if you like smaller, individual pieces.
  • Ajinomoto Umami Seasoning – The secret to these incredibly savory wings! This Japanese seasoning enhances the flavor of the chicken without adding a complicated blend of spices.
  • Salt – Good old-fashioned fine-grained table salt works best for me. I prefer Morton Iodized Salt because it distributes evenly and gives the wings that wonderfully salty flavor.

Recipe Tips

Use whole wings or cut them into pieces. I like keeping things simple, so I toss whole chicken wings directly onto the grill. If you prefer smaller pieces, use a sharp knife to separate the drumettes, flats, and wing tips at the joints. Save the wing tips for making homemade chicken broth or discard them.

Choose dark meat for a boneless version. Not a fan of wings? Try boneless chicken thighs cut into strips. Their higher fat content helps keep the meat juicy and flavorful on the grill. Chicken breasts can work, too, but they tend to dry out more quickly.

Don’t skip the Ajinomoto. This is the ingredient that makes these wings so special. You can certainly prepare them using salt alone, but you’ll miss that wonderfully savory umami flavor that takes them to another level.

Use fine-grained salt. I’ve experimented with kosher, sea, and Himalayan salts, but I keep coming back to regular table salt. Its fine texture distributes evenly over the wings and delivers the consistent seasoning I love. If using another type of salt, adjust the amount to taste.

Season both sides. Place the wings on the grill with their tops facing up and sprinkle with salt and Ajinomoto. Cook over low heat until lightly golden, then flip and season the other side. Continue grilling, turning as needed, until the wings are beautifully browned and cooked through.

Watch the heat. Chicken wings contain enough fat to cause flare-ups on the grill. Use low to medium-low heat, or move the wings to an indirect-heat area, so they cook thoroughly without burning.

Check for doneness. The wings should be golden brown, but color alone isn’t a reliable way to tell whether chicken is fully cooked. Use a digital meat thermometer to confirm an internal temperature of 165°F in the thickest part of the wing, avoiding the bone.

How to Serve Grilled Chicken Wings

The robust, savory flavor of these wings is incredible all on its own. There’s absolutely no need for dipping sauces or extra seasonings. Just serve them hot off the grill and enjoy!

  • At backyard barbecues. Serve with grilled corn, potato salad, coleslaw, or your favorite cookout dishes.
  • For game-day gatherings. Arrange on a large platter and let everyone dig in.
  • With grilled vegetables. Grilled vegetables of any kind make wonderful accompaniments.
  • With rice. Serve with steamed white rice and a simple cucumber salad for a Japanese-inspired meal.
  • Over fresh greens. Remove the meat from leftover wings and toss it over a salad for a delicious lunch.
  • As a party appetizer. Use flats and drumettes for smaller portioned wings that are perfect for sharing.

Drink Pairings

These salty, savory wings are especially delicious with a crisp Pinot Gris, chilled rosé, or ice-cold Japanese lager. I love how refreshing drinks balance the rich umami flavors without overpowering the chicken.

FAQs

Ajinomoto is a Japanese brand known for its umami seasoning, which contains monosodium glutamate (MSG). It enhances the natural savory flavor of foods, making it especially delicious on grilled meats, vegetables, and other savory dishes.

Yes. The FDA considers MSG generally recognized as safe when used in food. Although some people report sensitivity to MSG, controlled research hasn’t consistently demonstrated the reactions commonly attributed to it. As with salt and other seasonings, moderation is a sensible approach.

Absolutely! You can season the wings with salt alone and still get a tasty result. However, the Ajinomoto adds a distinctive savory flavor that makes this particular recipe special.

Yes! Boneless chicken thighs are a delicious alternative. Cut them into strips or smaller pieces for grilling and adjust the cooking time based on their thickness. As with wings, cook to an internal temperature of 165°F.

Nope! That’s one of the things I love most about this recipe. There’s no marinade or advance preparation required. Simply season the wings as they cook on the grill.

Of course! Both gas and charcoal grills work beautifully. The key is controlling the heat, so the wings cook evenly without burning. A cooler, indirect-heat area is especially useful when grilling over charcoal.

Use a digital meat thermometer to check that the thickest part of the wings reaches 165°F, avoiding the bone. Golden-brown skin is delicious, but the thermometer is the most reliable way to confirm they’re safely cooked.

If you happen to have leftovers (and that’s a pretty big if in my house!), refrigerate them promptly in an airtight container for up to three to four days.

Yes! Allow the wings to cool promptly, then transfer them to a freezer-safe container or bag. Freeze for up to three to four months for best quality. Thaw overnight in the refrigerator before reheating.

For crispy skin, arrange the wings on a baking sheet and reheat in a preheated 350°F oven until thoroughly heated. An air fryer works beautifully, too. Reheat leftovers to an internal temperature of 165°F.
